Traditional rabbit and snail Alicantino paella

If any dish is representative of Alicante, it has to be our paella which we call arroz (rice).  Important to note is that if it can be cooked with firewood it’s even better tasting!  Here we are going to give you the recipe so that you can enjoy this dish at home.

Ingredients per person:

150gr rice (bomba)
200gr rabbit

Preparation:

Step 1: Throughly wash the snails and place on low heat without boiling

Step 2: Brown the rabbit in olive oil on a frying pan and when browned add some peeled and diced tomatoes then leave it aside for 15 minutes.

Step 3: Place the rabbit and snails in a pot without adding oil and together with chicken or beef broth leave it simmering for 20 minutes.

Step 4: After 20 minutes have passed take the pot off the heat and allow to cool.  Take out the rabbit and snail with their liquid and place on hot paella pan.  It should be hot enough as to where the paella pan releases smoke once the liquid is placed on the paella pan.   This is when you add the rice and season.  In another 5 minutes add the saffron and maintain the heat for another 10 minutes.  In a total of 15 minutes the paella should be cooked.
